Vegan Vanilla White Cake

1 cup white sugar
½ cup canola oil
3 cups flour
1 tablespoon baking powder
¾ teaspoon salt
2 cups almond milk, soy milk, rice milk, coconut milk, or other non-dairy milk (Can use regular milk if you’re not making it vegan).
1 tablespoon vanilla extract
Vegan Chocolate chips (optional)

Directions:
  1. Preheat the oven to 350ºF (175ºC)
  2. Grease a 9x13 inch pan with cooking spray or oil.
  3. Using an electric mixer, place sugar and oil in a large bowl, and cream together until light and fluffy.
  4. In a small bowl, sift together the flour, baking powder, and salt. Add it to the creamed mixture, alternating with milk alternative. Beat the mixture well.
  5. Fold in vanilla and chocolate chips (if desired). Pour batter into prepared pan.
  6. Bake in preheated oven for 30 minutes or until inserted toothpick comes out clean. Note: This cake doesn’t become golden brown like other cakes, so it might be done even if it doesn’t look it. Use toothpick to decide.
