Vegan Vanilla White Cake
1 cup white sugar
½ cup canola oil
3 cups flour
1 tablespoon baking powder
¾ teaspoon salt
2 cups almond milk, soy milk, rice milk, coconut milk, or other non-dairy milk (Can use regular milk if you’re not making it vegan).
1 tablespoon vanilla extract
Vegan Chocolate chips (optional)
Directions:

Directions:
- Preheat the oven to 350ºF (175ºC)
- Grease a 9x13 inch pan with cooking spray or oil.
- Using an electric mixer, place sugar and oil in a large bowl, and cream together until light and fluffy.
- In a small bowl, sift together the flour, baking powder, and salt. Add it to the creamed mixture, alternating with milk alternative. Beat the mixture well.
- Fold in vanilla and chocolate chips (if desired). Pour batter into prepared pan.
- Bake in preheated oven for 30 minutes or until inserted toothpick comes out clean. Note: This cake doesn’t become golden brown like other cakes, so it might be done even if it doesn’t look it. Use toothpick to decide.
