Mexican Rice Pudding
½ cup white rice, uncooked
½ cinnamon stick (or 1-2 tsp ground)
1½ cups water
1 cup milk
¼-⅓ cup sugar
2½-3 Tbsp raisins (optional)
1 tsp vanilla extract (optional)

Directions:
- Put the rice, cinnamon, and water in a saucepan. Bring to a boil quickly. Reduce heat, cover, and simmer until the rice is cooked (15-20 minutes).
- Add milk, sugar, raisins, and vanilla. Cook uncovered until the rice absorbs the milk (10-15 minutes).
- Remove from heat, and take out the cinnamon stick (if you used one), and cover. Let is sit for a few minutes.
- Serve it hot or cold.
