Oreo Cheesecake
Crust:
16 Oreos
4 tbsp melted butter
crust directions:
Grind Oreos until fine in a food processor. Transfer to a bowl and fold in melted butter. put the mixture in the bottom of a 9 or 10 inch spring form pan and spread out over the bottom and then compress it with a spatula or the bottom of a cup. Set aside.
cheese filling:
about 2 cups plus 2 tbsp cold heavy cream
1 8oz package of cream cheese, softened
6 tbsp confectioners sugar (1/4 cup+2 tbsp)
1 tsp vanilla extract
4-6 Oreos, broken up (to taste)
filling directions:
Pour the cream into a bowl and beat until peaks form using an electric mixer or in stand mixer. Set aside. In another bowl, combine cream cheese, confectioners sugar, and vanilla, and beat a little bit until well combine and creamy. Fold in the heavy cream and Oreos. Pour and spread cheese mixture over the crust, and place in the fridge until set (5-6 hours, overnight is better). Pull out and decorate with more Oreos (optional) prior to serving. Enjoy!
