Healthier blueberry muffins
My dad and I decided to design our own blueberry muffin recipe. These are much healthier than regular blueberry muffins, and they're also tasty. When you try them, don't expect the taste of a typical blueberry muffin. They are much coarser because of the bran. 1 cup all purpose flour
1 cup oat bran 1 tsp baking powder ½ tsp baking soda ¼ cup light brown sugar 4 tbsp buttermilk powder ½ cup applesauce 2 eggs 1 tsp vanilla 1 cup water 1 cup frozen blueberries, rinsed Directions: Preheat the oven to 350ºF. Combine the dry ingredients in a kitchen aid mixer. Combine the wet ingredients (not the blueberries) in a small bowl. Add the liquid ingredients into the kitchen aid, and let it mix for about 5-10 minutes. Fold in blueberries. Pour the batter into a greased or paper lined muffin tin. Bake for 25 minutes, or until inserted toothpick comes out clean. Recipe by: My dad and me |
