Gluten Free Brownies!
1/3 cup of coconut oil
4 ounces of dairy free semi-sweet chocolate chips
4 ounces of unsweetened baker’s chocolate
3/4 cup of packed brown sugar
2 eggs
2 tablespoons of maple syrup
1/3 cup of potato or corn starch
1 teaspoon vanilla
1/8 teaspoon of salt
Directions:
1. Preheat the oven to 350 degrees.
2. Grease and flour an 8x8 inch baking pan. Use any gluten free flour or starch for this.
3. Using a microwave safe, deep bowl, melt the oil with the chocolates in the microwave for 30 seconds. Stir and put it back in for another 30 seconds, or as needed until it is melted. (Do this step in 15-30 second increments - it varies by size of the chocolates and the microwave)
4. Pour the chocolate mixture into a large mixing bowl.
5. Mix in the sugar, eggs, maple syrup, vanilla and salt.
6. Sift in the corn or potato starch.
7. Beat the batter for about 1 minute.
8. Pour the batter into the 8x8 pan and bake for about 30 minutes.
