Banana Bread
⅓ cup canola oil
⅔ cup sugar (You can cut it to 1/2 cup if you want it less sweet, especially if your bananas are way overripe. If your bananas are very overripe, they'll naturally be sweeter.) 2 eggs 1¾ cup flour (all purpose, wheat, or white whole wheat) 2-3 overripe bananas (3 for enhanced banana flavor) 2 teaspoons baking powder ½ teaspoon salt ¼ teaspoon baking soda 1 teaspoon vanilla ½ cup walnuts (optional) chocolate chips (optional) Directions Preheat the oven to 325ºF. Using an electric mixer (or by hand), cream oil and sugar together; beat in eggs. Beat in the flour and banana, adding part at a time and alternating, and then add baking powder, salt, baking soda, and vanilla. If it is too thick (it should be a batter) slowly add some warm water. Fold in nuts and/or chocolate chips if desired. Put batter into greased loaf pan, and bake in preheated oven for 60-70 minutes. Let it cool before taking it out of the pan. Note: To make muffins, put batter into a greased or paper lined muffin pan and bake for about 40 minutes. Recipe from: My Great Grandmother |
